Gingerbread

The wafting smell of spices traveling through my kitchen has inspired me to write about Gingerbread today! Gingerbread could mean a cake or a cookie baked using ginger. I'm talking about the cookie version today. Yes, the pretty little ginger men, the intricate gingerbread houses, the cutesy shapes that they are baked in are all a part of the Christmas charm every year.


So like I said, I've been making Gingerbread cookies since morning, which means I've eaten my fair share of them too :P I like eating them on the day that they are baked because my cookie recipe is so good that it doesn't dry out too much...As I'm typing this, my house help Manda just announced "Mast bana hai cookies" which simply means "the cookies are really nice"


So let's dive right into the recipe... My sipe mix is constant. I just make a huge batch of it and use it throughout the year. You can refer to the spice mix recipe in my previous post here.

If you love ginger as I do, you can add extra ginger powder, or better yet, go in with freshly grated ginger and then you can thank me later!


You can roll the dough out as thinly as you like. I also use random cookie cutters. I have these really cute Ginger men cutters that are super tiny, I almost always use them. Or go in for a gingerbread house, I made a very simple one ages ago, have a look at it in the video below!


So here's my recipe for gingerbread cookies. If you decide not to melt the butter, you will get a softer cookie. Try out both ways and let me know in the comments which texture you like more. I always soften the butter (not melt) when I'm making the cookies for a crowd, I feel like they are less hard. Here you go...


Recipe:


For the cookies:

1/4th cup Butter

1/6th cup Honey

1/6th cup Brown Sugar

2 Tbsp Milk

Pinch of Salt

1 cup Flour

1/2 tsp Ginger powder

1/4 tsp Baking Powder


For the Royal Icing

1 egg White

1 1/2 Cup Icing Sugar
