Creamed Corn

A super easy snack that can be eaten at any time of the day. Creamed corn works great as a dip or as a side dish on a heavy plate of food like a sizzle. With all the prep done, it took only 15 minutes of my time to make and you can make it too when unexpected guests show up. Which seems more than impossible in the time of COVID, but unexpected hunger definitely shows up every now and then. So you might as well make it the.



Ingredients

half and Onion, finely chopped

1 Clove of Garlic, finely chopped

Coriander leaves, optional

1 Tbsp Flour

1Tbsp Butter

1/4th cup Cream

1/4th cup Water

1 triangle of Laughing Cow Cheese

Salt to taste

Pepper to taste

Herbs, optional


Method:

  1. To make properly boiled corn, start with corn, enough water to cover it along with salt and sugar to taste. Boil it for 15 minutes and let it cool. Strain and use the boiled kernels for this recipe. The leftover water can be used to make sweet corn soup.

  2. Saute finely chopped onion, garlic and coriander in a little bit of oil till the onions soften. Add flour and butter and cook till the flour looks a little golden.

  3. Add cream and water and mix well. You will get a nice pasty mixture. Add corn kernels and cook till it comes to one boil.

  4. Turn off the flame and add 1 cube of the cheese and adjust the seasoning as per taste. Add salt pepper and herbs as desired.

  5. Mix and serve with chips.
