Beignets

Soft, fluffy, pillowy and chewy, beignets are cousins of doughnuts without the hole in the centre. They are always served doused with icing sugar and there's no way to escape the might of this deep-fried fritter, that's so easy to make, you can do it when you're actually sleepy and have them ready just in time for coffee.

A famous treat from cafe-du-monde, they make for a perfect snack during monsoons.

Let's see how to make these



Ingredients:

1 Cup Flour

1/3 cup +1tbsp Water

1tsp Yoghurt

1/2 tsp Sugar

1/4th tsp Salt

1/4th tsp Yeast

Oil for deep frying

Icing sugar as required


Method:

  1. In a bowl add water, yoghurt, sugar and yeast. Mix well till the sugar dissolves and add in the flour and salt.

  2. Knead the dough for 3-4 minutes by hand and use dry flour if necessary.

  3. Make a taught ball and place it in a bowl, covered, for 1 hour.

  4. Punch down the dough and form it into a flat disc that is less than 3/4th of an inch in height.

  5. Add dry flour at the bottom to avoid sticking to the counter. set aside for 15 minutes.

  6. Cut into small squares that are around 3/4th of an inch in length and width.

  7. Deep fry these small squares on medium heat and place on a paper towel.

  8. Sieve over a healthy helping of icing sugar and serve warm with a nice black coffee.
